Sweet Potato and Soyrizo

Adventure

Where sweet and spicy dance their way through a week full of flavor ✨

This Food Adventure is all about one of my favorite flavor combinations — sweet and spicy.

It starts with a fresh pasta that transforms sweet potatoes into ravioli, filled with soyrizo and finished with a bright Hatch chile chimichurri.

From there, the same ingredients show up in new ways — a cozy egg casserole, weeknight enchiladas, and a quick protein bowl — so you can keep cooking without starting from scratch every time.

Now while sweet potatoes and soyrizo are the stars here, I couldn’t help but bring in something that feels like home for me — Hatch green chiles.

Growing up in Colorado, we put that shit on everything! And yes, I know this is a hot take because Hatch chiles are technically from New Mexico… but if New Mexico was doing it right, it wouldn’t be called Colorado green chile on menus all across the US (my New Mexico friends can fight me later).

My family’s recipe has been passed down for generations, so this flavor runs deep. After moving away, getting my hands on Hatch chiles whenever I wanted became a lot harder, which honestly felt a little tragic.

But then I discovered that Carpinito Brothers Farm hosts a Hatch chile roast every August… and i fully indulged. I bought 12 pounds.

No regrets.

Now I stock my freezer and use them all year long, adding them into anything that could use a little heat and brightness.

In this adventure, they’re not the main character — but they definitely make an appearance. They bring just enough warmth and freshness to lift the dish without stealing the spotlight from that sweet and spicy combo.

I’ve always been intrigued by things that live in juxtaposition — opposites, combinations that don’t seem like they should work. And then somehow, when they come together just right, it’s pure magic. That’s exactly what sweet and spicy is for me. It’s rich, it’s comforting, it’s a little bold — but still somehow feels balanced and bright.

These flavors always bring me back to a little bar next to my old office in downtown LA, in the fashion district, called Pattern Bar. They served the best arepas. One of them was a sweet potato and chorizo arepa, and we would always order a side of black beans for the table — deeply spiced and served with caramelized onions. I still dream about that lunch.

I’ve since moved away, and Pattern Bar no longer serves arepas (still not over it), but I’ve been chasing those flavors ever since — trying to bring them to life in my own kitchen. Over time, I started playing around, swapping in soyrizo for a lighter option, pairing it with sweet potatoes, and building different meals around that same sweet and spicy balance.

Chasing the flavor dream! This Food Adventure is built around my obsession with that exact combo, and I hope you can taste a little bit of that magic.
